    [Abstract] The editor of the International Nutritionist Channel of the Global Online School of Registration has compiled relevant information about the registration of international dietitian test sites in 2019: carbohydrates for the reference of candidates.

    I. Classification

    (1) According to the degree of polymerization (DP): sugar (1 to 2), oligosaccharide (3 to 9), polysaccharide (≥10)

    Monosaccharides: glucose, fructose, galactose. Other monosaccharides: ribose, deoxyribose, arabinose, xylose.

    Disaccharides (sugars obtained by condensing two molecular monosaccharides): sucrose, 1actose, maltos, and trehalose.

    Sugar alcohols: sorbitol, mannitol, xylitol, maltitol, inositol.

    Oligosaccharides (referring to a class of small molecular polysaccharides composed of 3-9 monosaccharides): raffinose, stachyose

    Polysaccharides (macromolecules composed of more than 10 monosaccharides): glycogen, starch: amylose, and amylopectin fiber.

    (2) Nutrition perspective

    Available carbohydrates: nutritional (providing energy) to the human body, including monosaccharides, disaccharides, starches.

    Unavailable carbohydrates: dietary fiber-structural polysaccharides (cellulose, hemicellulose, lignin, pectin).

    Function

    3.Sparing protein action

    When you eat enough carbohydrates, you can prevent the protein in the body and in the diet from turning into glucose, which is called protein saving.

    3. Dietary fiber: A general term for polysaccharides in food that cannot be digested and absorbed by human digestive enzymes.

    classification:

    (1) Insoluble fiber: cellulose, hemicellulose, lignin.

    (2) Soluble fibers: pectin, gum, and viscose. (It dissolves in water and absorbs water and swells. It can be digested by intestinal microorganisms and often exists in plant cell fluid and interstitial cells.)

    Function: Reduce plasma cholesterol, improve blood sugar production response, improve large intestine function, control weight and lose weight.

    Supply and source of carbohydrates (emphasis)

    Prevent lower carbohydrates from total energy intake and higher fats from total energy.

    The Chinese Nutrition Society recommends that the dietary supply of carbohydrates of Chinese residents accounts for 55% to 65% of the total energy, and refined sugar accounts for less than 10% of the total energy. Dietary fiber: 20 ~ 35g.

    Hypoglycemia Index: ﹤ 55

    Medium Glycemic Index: 55 ~ 75

    High glycemic index: ﹥ 75
